**Baked Oatmeal:** Preheat oven to 350 degrees F. In a bowl, mash 1/2 a banana or add 1/3 cup of applesauce. Add in 1/3 cup of oats, 1 egg white (if vegan, you can skip this step), 1 tsp cinnamon, 1/2 tsp nutmeg, 1 tsp vanilla extract, sweetener (such as Splenda packets, maple syrup, brown sugar, or coconut sugar), and 1/2 tsp baking powder. Finally, pour in around 1/3 - 1/2 cup of milk or water. Thoroughly mix all these ingredients together and pour into a greased bake-safe (preferably circular) dish. Bake for 35-40 minutes until the top becomes crispy.
**Brown Swirl:** While the oatmeal bakes, in a small bowl, add 1/4 of mashed banana or 3 tbsp of applesauce. Add in 1 tbsp of powdered peanut butter and 1/2 tsp cinnamon. Mix all the ingredients and put the mixture in a zip lock bag.
**Vanilla “Icing”:** If you have vanilla yogurt, use that. Otherwise, in a bowl, add some plain yogurt (like Greek yogurt). Add in 1/2 tsp vanilla extract or sweetener of choice. Mix in around 1 tbsp vanilla protein powder. Mix these ingredients and place the mixture in a different ziplock bag.
**Assembly:** Take your baked oatmeal out of the oven. Cut a small hole in the bottom corner of your ziplock bag with the “brown swirl.” Carefully pipe a swirl onto the top of your baked oatmeal. Grab your ziplock bag with “icing” and cut a small hole in the bottom corner. Carefully pipe straight lines across on top of your brown swirl. You can top everything with more cinnamon. Enjoy!
