A creative and delicious twist on traditional sushi, this One Pan Sushi Cake combines layers of sushi rice, smoked salmon, and avocados, all assembled in a single pan for easy preparation.
1. Rinse the sushi rice well until the water runs clear.
2. Add water to the rice, bring to a boil, then let it cook for 12 minutes.
3. To the cooked rice, mix in rice vinegar and sugar until dissolved, gently stirring with a spatula to avoid making the rice mushy.
4. Line a pan with plastic wrap or brush it lightly with neutral oil to prevent sticking.
5. Evenly spread out and layer the smoked salmon on the bottom of the pan.
6. Add a layer of avocado slices on top of the salmon.
7. Add the cooked sushi rice on top of the avocados.
8. Chill in the fridge for 1 hour to set.
9. Turn the pan over, remove the plastic wrap, and slice with a wet knife.
10. Serve with soy sauce, wasabi, and sriracha, if desired.
